Winemaking
Pi'nouf is made at Caves Foncalieu by Delphine Glangetas in an ultra modern facility in Arzens, located 20 minutes South West of the renowned Medievel town of Carcassonne. This is a modern-styled wine with plenty of Old World sensibility. Fermentation took place in cooled stainless steel vats and pressing was done membrane or bladder presses to give rich, soft tannins. 20% of the 2009 vintage was aged in second year small oak barrels.

Tasting Notes
Brilliant cherry red with purple highlights. Vibrant cherry and strawberry aromas follow through on a rich medium-to-full-bodied palate with a hint of vanilla. This has a long, lingering finish with enough supple tannins to give some classic ‘grip.’ This can work with anything hearty and will pair with reduction sauces and stronger cheeses.
